Basic Pan-Fried Cod

"Fish & chips any one? This seems to be a New England staple, locals claim this as one of their all time favorites and of course it wouldn't be complete with out the french fries !  " 


Ingredients
Serves: 6
6 (6 ounce) fresh filets cod
3 eggs
1/2 cup milk
1 cup flour
1 teaspoon paprika
1/2 teaspoon ground white pepper
1/2 teaspoon salt
1 teaspoon minced fresh parsley
1/4 cup olive oil
2 limes, sliced

Directions
1. Mix together eggs and milk in bowl. In a separate bowl, combine the flour, paprika, pepper, salt, and parsley.
2. Heat olive oil over medium heat in large skillet.
3. Dip each cod fillet first in egg mixture then in flour mixture. Shake excess flour from fillets, then fry in oil, until fish flakes easily - about 2 minutes per side. Drain on paper towels.
4. Serve fish garnished with lemon slices.
