Polynesian Chicken Recipe

I am not sure what makes this recipe Polynesian, I guess it's the pineapple?? Whatever the reason for its name, this baked chicken dish will invigorate your sweet taste buds and put the T for the tang in tangy ! This is a simple variation of the recipe, usually its loaded with other veggies, but I wanted to keep it simple. 
 Ingredients
8 boneless skinless chicken thighs
1/4 cup white cooking wine
½ cup soy sauce
1 ½ cup chicken broth
¼ cup dark brown sugar
¼ cup pineapple juice
½ cup fresh pineapple diced (you may use canned)
1 bay leaf
1 tablespoon crushed ginger
1 tablespoon minced garlic
1 teaspoon Chinese five spices

Directions
In a large bowl, mix together all ingredients except for chicken & pineapples. Then add chicken & pineapples, be sure all the chickens are covered in marinade. Place in refrigerator for at least 24 hours.
Place chickens & pineapples in a single layer, in a greased baking pan. Pour about half of the marinade over chickens, cover with foil. Bake in a preheated 350 degree oven for 35 mins. Then raise the oven temp to 375 degrees, and bake uncovered for an additional 10 mins.
Serve alongside rice & potato salad! Perfect Hawaii style lunch or dinner J
