Pork Guisantes (Filipino Pork & Peas) Recipe

Growing up part Filipino  this wonderful dish quickly became one of my favorites ! This is a very simple variation of this dish, just the way my grandmother taught me. 

Ingredients 
2 tbsp oil
1 onion, sliced
2 cloves garlic, minced
1 1/2 lb lean pork, sliced in small pieces
1 tbsp soy sauce
2 tbsp patis
1/2 cup water
1 bay leaf
3 oz. tomato paste
1 pkg (6 oz) frozen peas
1 can (3-4 oz) pimientos, sliced
Salt to taste

Directions
Heat oil in large skillet. Saute garlic, onions and pork until browned. Add soy sauce, patis, water and bay leaf. Bring to a boil, reduce heat and simmer until pork is tender, about 5-7 minutes. Add tomato paste, peas and pimientos. Simmer for 5 more minutes. Salt to taste.
